This lemon-apricot couscous couldn't be simpler to make, but tastes like you spent a lot of time and effort. It's a great accompaniment to my Morrocan Chicken soup. (as seen in the picture)

Ingredients
  • 2 c. water
  • 2 Tbl. honey
  • 1 Tbl. olive oil
  • 1 Tbl. fresh lemon juice
  • Minced zest from one lemon
  • Pinch of salt
  • 1 c. dry couscous
  • 1/4 c. dried apricots, diced

Directions
  1. Bring water, honey, oil, lemon juice, zest and salt to boil in saucepan.
  2. Remove from heat, stir in couscous and apricots.
  3. Cover and let stand five minutes, or until all water is absorbed.
  4. Fluff with a fork before serving.
