Fruit Salad Cheesecake

So easy to make and so fruity.
Ingredients
- 1 20 oz. can crushed pineapple shopping list
- 1 cup sugar shopping list
- 1/2 cup cold water shopping list
- 2 envelopes unflavored gelatin shopping list
- 1 8 oz. pkg. cream cheese, cubed shopping list
- 1 1/2 cups crisp coconut cookies, crushed shopping list
- 2 tbls. butter, melted shopping list
- 2 cups white grapes, halved shopping list
- 1 11 oz. can mandarin oranges, drained shopping list
- 1 10 oz. jar maraschino cherries, drained and chopped shopping list
- 1/2 cup pecans or walnuts, chopped shopping list
- 2 cups whipped cream (I've used Cool Whip and it came out okay but I do suggest the real thing) shopping list
How to make it
- In saucepan, cook pineapple and sugar over medium heat until heated through, about 5 minutes
- In mixing bowl, put cold water and then sprinkle gelatin while stirring and let sit for 1 minute
- Stir into pineapple mixture
- Reduce heat to low and add cream cheese
- cook and stir until combined
- Remove from heat and cool completely
- In mixing bowl, add coconut cookie crumbs and butter
- Press into bottom of greased 9 inch springform pan
- In mixing bowl, stir grapes, oranges, cherries and nuts into cream cheese mixture until combined
- Fold in whipped cream
- Pour into pan
- Cover and refrigerate overnight
