Lavender Biscuits Recipe

Lavender Biscuits Recipe
Ever since discovering how much lavender is grown around me, I've come to experiment with it. The biscuits would be served best with some fruit and creme fraiche.

Ingredients
  • 2 c flour
  • 3 Tbsp sugar
  • 1 Tbsp baking powder
  • 2 tsp lavender flowers
  • 1 tsp salt
  • 1/4 lb cold unslated butter, cut into 1/4" cubes
  • 1 c heavy cream (+ extra to glaze)
  • Creme Fraiche
  • Berries (in sugar, w juice)

Directions
  1. Preheat oven to 350 and butter a baking sheet
  2. Sift together the flour, 2 Tbsp sugar, baking powder, and salt into a large bowl.
  3. Mix in the lavender flowers (or sift them in with the other ingredients, if you prefer).
  4. Cut in the butter until the dough is a coarse meal.
  5. Add 1 c of cream and mix. The dough will be tacky.
  6. Flour a work surface, and spread out the dough to about 3/4" thick.
  7. Cut into rounds (3" should make 12 biscuits).
  8. Brush the tops with cream and sprinkle with the remaining sugar.
  9. Bake until the biscuits just brown, about 20 minutes.
  10. Cool on a rack for 5 minutes.
  11. Serve with Creme Fraiche and berries, spooned over the halved biscuits.

I unfortunately discovered a few months back that I'm allergic to eating lavender. :( But this recipe does sound good! I have a wonderful rosemary shortbread recipe I'll have to post...

This is going on my list of things to try
