Passover Fried Green Tomatoes Recipe

Ingredients
  • 1/2 cup matzah meal
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1/8 tsp sugar
  • 2 large eggs
  • 4 to 5 large green tomatoes ( about 2 lbs )
  • 1/2 cup oil to fry

Directions
  1. In a pie plate mix the dry ingredients.
  2. In another plate fork mix eggs.
  3. One at a time dip 1/2 inch thick cored sliced tomatoes into eggs, then matzah meal, pressing meal into surface of tomatoes .
  4. In a heavy skillet heat oil and fry tomatoes, turning only once until golden brown.
  5. Drain on paper towels.
  6. Add additional oil if needed
  7. Yield: 4 to 6 serving
