How to make it

  • In a pie plate mix the dry ingredients.
  • In another plate fork mix eggs.
  • One at a time dip 1/2 inch thick cored sliced tomatoes into eggs, then matzah meal, pressing meal into surface of tomatoes .
  • In a heavy skillet heat oil and fry tomatoes, turning only once until golden brown.
  • Drain on paper towels.
  • Add additional oil if needed
  • Yield: 4 to 6 serving
