Ingredients

How to make it

  • Preheat oven to 350F, grease and line a 9x13" pan or two 8" pans.
  • Whisk together flours, oats, baking powder, baking soda and pie spice in a medium bowl. Set aside.
  • In a large bowl beat together oil, brown sugar, honey and applesauce until smooth.
  • Add sour cream, vanilla and tofu puree and again beat smooth.
  • Add flour and bananas in alternate batches, starting and ending with dry.
  • Pour batter into prepared pan(s), top if desired.
  • Bake 25 minutes, rotating pans after 15 minutes.
  • Cool completely in pans (or chill if possible) before cutting.

    Lillian - do you have yogurt? That's a better SC swap. As for the tofu, you'd have to add two eggs instead, it's a binder. You can try one egg and 2 tbsp of peanut butter too. Good luck!

    very very nice combo!! Need bananas, and will throw in flax seed too (lowers cholestereol much better than the pharmaceuticals. has a nutty flavor.

    This sounds very good! I love the fact that its low fat! Can I sub light cream cheese for the sour cream? And can I omit the tofu? I don't have these 2 items in the house right now and I'm thinking of trying these!
