My friend, sparow64 creates a lot of her recipes in "Mad Scientist" mode...That is exactly how I came up with these, thus the name...Thanks sparow!!

Ingredients
  • 1 lb. ground beef
  • 1 small onion, finely chopped
  • 2 tsp. cornstarch
  • 1-14 1/2 oz. can diced tomatoes with green chilies, undrained
  • 14 slices Velveeta
  • 4 English Muffins, split

Directions
  1. Preheat oven to broil
  2. In skillet, brown hamburger and onion until meat is no longer pink
  3. Sprinkle in cornstarch
  4. Stir in tomatoes
  5. Cook, uncovered until slightly thickened
  6. Add 6 slices of cheese and stir until cheese is melted
  7. Put buns on baking sheet and spoon hamburg mixture onto each muffin half
  8. Put remaining cheese over top of meat mixture
  9. Broil until cheese melts
