Strawberry Rice Crisp Recipe
STRAWBERRY RICE CRISP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Howell Estate in Canton, Texas in 1981.

Ingredients
  • 3 cups cooked brown rice
  • 3 cups fresh strawberries
  • 3 tablespoons firmly packed brown sugar
  • 1/4 cup firmly packed brown sugar
  • Vegetable cooking spray
  • 1/3 cup rice bran
  • 1/4 cup whole wheat flour
  • 1/4 cup chopped walnuts
  • 1 teaspoon ground cinnamon
  • 3 tablespoons margarine

Directions
  1. Combine rice, strawberries and 3 tablespoons sugar.
  2. Coat 8 individual custard cups or 2 quart baking dish with cooking spray.
  3. Place rice mixture in cups or baking dish and set aside.
  4. Combine bran, flour, walnuts, remaining sugar and cinnamon in bowl.
  5. Cut in margarine with pastry blender until mixture resembles coarse meal then sprinkle over rice.
  6. Bake at 375 for 20 minutes or until thoroughly heated then serve warm.
