This came to me as a whimsical twist to a family favorite. Tabbouleh is a dish rich in nutrition yet light.

Ingredients
  • 1-cup organic bulgur wheat
  • 2 cups water
  • 1-cup flat leaf parsley rough chopped
  • One cup chopped romaine lettuce
  • One cup chopped baby spinach
  • One medium size tomato diced
  • one mango peeled and diced
  • Juice of one lemon
  • Pinch of salt
  • 1-teaspoon olive oil

Directions
  1. In a medium bowl, rehydrate the bulgur wheat with the water..
  2. Add all the ingredients and let sit covered in the refrigerator for and hour.
  3. Serve with pita bread or pita chips.

Where is the mango or do you serve it with mango? Otherwise sounds yummy...

This looks great- I have made this without the mango but what a great addition.


Love the addition of mango here, I also never added spinach and lettuce to Tabbouleh before. This sounds very unique and delicious!
