Onions Rings to the next level

- beer batter: shopping list
- 1 cup all-purpose flour shopping list
- 2 teaspoons dry mustard shopping list
- 1 teaspoon freshly grated nutmeg shopping list
- 1/2 teaspoon salt shopping list
- 4 eggs, separated shopping list
- 2 teaspoons Dijon mustard shopping list
- 1 cup beer shopping list
- Onions: shopping list
- 3 large onions, cut into 1/4-inch slices shopping list
- ice water shopping list
- vegetable oil for frying shopping list
- For loaf: shopping list
- butter to coat loaf pan shopping list
- Fried onion rings (see recipe) shopping list
- black pepper, to taste shopping list
- 1 1/2cups (or more or less, to taste) monterey jack cheese shopping list
How to make it
- Prep does not include overnight chilling of batter.
- Beer batter:
- In a large bowl, combine flour, dry mustard, nutmeg and salt.
- Set aside.
- Combine 4 egg yolks with Dijon mustard and beer.
- Add to flour mixture and stir until smooth.
- Cover and refrigerate overnight.
- Preheat oven to 400 degrees.
- Separate onion slices into rings and cover them in ice water.
- Let stand for 30 minutes.
- Drain onions and pat dry.
- Just before using batter, beat 4 egg whites until stiff.
- Fold into batter.
- In a skillet, add vegetable oil to reach 2 inches up sides of pan.
- Heat to 375 degrees (check with a deep frying thermometer).
- Dip onion rings in beer batter.
- Shake off excess and fry in oil until golden brown.
- Drain rings on paper towels.
- Butter a 9-inch loaf pan.
- Line bottom with a layer of fried onion
- Sprinkle with pepper and a layer of shredded Monterey Jack cheese.
- Repeat these layers until ingredients reach top of pan.
- Bake at 400 degrees for 10 minutes. Invert onto a serving plate.
- Serve warm.

this was so good, the only difference I put was a little cayenne pepper, but than again my hubby likes it in pretty much anything lol *5*
