Chicken Jalfrezi

- 2 T. vegetable oil shopping list
- 2 T. garam masala shopping list
- 2 t. ground cumin shopping list
- 2 t. yellow mustard seeds, ground in mortar and pestle shopping list
- 1 t. ground turmeric shopping list
- 1 onion, sliced shopping list
- 1 inch piece of fresh ginger, peeled and minced shopping list
- 3 garlic cloves, minced shopping list
- 1 red bell pepper, seeded and sliced shopping list
- 1 green bell pepper, seeded and sliced shopping list
- 2 fresh hot green chiles, seeded and finely minced shopping list
- 1 ½ lbs. (675 grams) boneless, skinless chicken (breasts or thighs) shopping list
- 1 c. canned chopped tomatoes (I prefer more.) shopping list
- 3 T. fresh cilantro, chopped shopping list
- salt to taste shopping list
How to make it
- Heat oil in a large saucepan over medium heat.
- Add garam masala, cumin, mustard seeds, and turmeric. Stir 1 minute, until fragrant.
- Add onion, ginger, and garlic. Cook stirring often for about 2 minutes, until onion starts to soften.
- Add the red and green peppers and the chiles. Cook for 5 minutes, stirring often.
- Increase heat to medium-high. Add chicken, and cook until it begins to brown.
- Add tomatoes and cilantro. Lower heat and simmer 10 minutes, or until chicken is cooked through, stirring frequently.
- Serve hot with basmati rice and naan bread. Yum!!
