My honey made this yesterday. It's absolutely delicious! We love curries and this is one we/he'll make again and will share with friends. I highly recommend trying this easy version.

Ingredients
  • 2 T. vegetable oil
  • 2 T. garam masala
  • 2 t. ground cumin
  • 2 t. yellow mustard seeds, ground in mortar and pestle
  • 1 t. ground turmeric
  • 1 onion, sliced
  • 1 inch piece of fresh ginger, peeled and minced
  • 3 garlic cloves, minced
  • 1 red bell pepper, seeded and sliced
  • 1 green bell pepper, seeded and sliced
  • 2 fresh hot green chiles, seeded and finely minced
  • 1 ½ lbs. (675 grams) boneless, skinless chicken (breasts or thighs)
  • 1 c. canned chopped tomatoes (I prefer more.)
  • 3 T. fresh cilantro, chopped
  • Salt to taste

Directions
  1. Heat oil in a large saucepan over medium heat.
  2. Add garam masala, cumin, mustard seeds, and turmeric. Stir 1 minute, until fragrant.
  3. Add onion, ginger, and garlic. Cook stirring often for about 2 minutes, until onion starts to soften.
  4. Add the red and green peppers and the chiles. Cook for 5 minutes, stirring often.
  5. Increase heat to medium-high. Add chicken, and cook until it begins to brown.
  6. Add tomatoes and cilantro. Lower heat and simmer 10 minutes, or until chicken is cooked through, stirring frequently.
  7. Serve hot with basmati rice and naan bread. Yum!!
