Curried Mushroom Lentil Soup Recipe
This is an easy, healthy, delicious soup that can be made in the slow cooker.

Ingredients
  • 1 Tbsp vegetable oil
  • 1 large onion
  • 4 cloves garlic, minced
  • 1 Tbsp minced ginger
  • 6 cups, sliced mushrooms
  • 1 Tbsp curry paste
  • 1/4 tsp salt and pepper
  • 6 cups vegetable stock
  • 1/2 cup red lentils
  • 1/3 cup barley

Directions
  1. Saute onion, garlic, mushrooms, ginger and curry for 10 minutes over medium heat in oil.
  2. Add all other ingredients and simmer for an hour or until lentils and barley are cooked through.
  3. OR
  4. Add all ingredients to slow cooker and cook on high for 3-4 hours.
