Citrus Walnut Pasta Salad For Those Walnut Pasta Lovers Recipe

This is a California Citrus Salad loaded with walnuts and good stuff.....and includes citrus in the dressing for all around nutrition and taste and tastes good in any city.

Ingredients
- 3/4 cup chopped walnuts
- 3 cups bow tie pasta
- 1 cup smoked cheese such as Gouda
- 1 cup celery and cut thin in diagonal slices
- 1/3 cup finely chopped red onion
- 3 tablespoons fresh chives
- 2 tablespoons chopped fresh parseley
- Dressing:
- 1/3 cup fresh orange juice
- 1/4 cup fresh lemon
- 4 tablespoons evoo extra virgin olive oil
- 1 tablespoon stone ground mustard
- ground pepper to taste
- 2 teaspoons rice vinegar
Directions
- Here we go
- Place walnuts on a cookie sheet and bake for about eight to ten minutes. This makes salad terrific...
- cook pasta according to directions
- Put dressing ingredients in a large bowl and use whisk to blend
- Add pasta, cheese, celery, red onion, walnuts, chives and parsely to the dressing mix and serve.
- If you want to you can add chicken if you are not a vegetarian....
- I eat it without chicken but it goes with chicken, too....
- Enjoy this light and yummy salad loaded with good stuff.
