Ingredients

1 1/2 cups fresh pineapple, diced

1 1/2 cups cucumber, seeded, diced

2 teaspoons garlic, minced

2 teaspoons ginger, fresh, minced

8 mint leaves, strips

2 tablespoons cilantro, fresh, chopped fine

1 lemon, juiced

1 lime-juiced

1 fresh red Chile pepper, minced

5 scallions, diced

1 small red onion

Directions

In a large glass bowl, mix pineapple and cucumbers. Add garlic, ginger, mint, Cilantro, both juices, pepper, scallions, and onion. Fold together and put in a self-sealing plastic storage bag and seal. Serve with chips.
