I might follow the advice of 101 Cookbooks and use different nuts and seeds after making these the first time per the recipe, just to change it up a bit. I can't imagine what glory the coconut oil adds to this cookie!

As I've never made these luscious-sounding cookies, I'm not certain of their sweetness level, otter.
I can only assume that Trader Joe's or specialty store would carry coconut oil,lasaf although someone in GR may have a better answer than that!
