How to make it

  • Sift the cake flour twice and return it to the sifter.
  • In a medium bowl, add the egg yolks, 1/4 c. sugar, and the vanilla. Beat on high speed until thick and pale yellow, 2-3 minutes.
  • Scrape the yolk mixture into a large bowl. Sift the flower evenly over the top, but do not mix it in.
  • In another large bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form. Increase speed to high, and gradually add the 1/3 c. sugar. Beat until the peaks are stiff, but not dry.
  • Fold 1/3 of the egg whites mixture not quite thoroughly into the yolk mixture. Fold in the remaining whites in 2 additions.
  • Scrape the batter into a large pastry bag fitted with a 5/8" plain tip.
  • Pipe 4" fingers at least 1" apart on baking sheets lined with parchment paper.
  • Sift powdered sugar lightly over the lady fingers.
  • Bake in a 350 degree F preheated oven for 10-15 minutes.
  • Slide the parchment onto a rack and cool completely.
