Joy Of Cookings Ladyfingers Recipe
I'm posting this for my friends who can't find store-bought ladyfingers! Homemade is always better anyway. :)

  • **all ingredients should be at room temperature**
  • 1 c. plus 2 tbsp. sifted cake flour
  • 6 eggs, divided into yolks and whites
  • 1/4 c. sugar and 1/3 c. sugar
  • 1 tsp. vanilla
  • 1/4 tsp. cream of tartar
  • powdered sugar

Directions
  1. Sift the cake flour twice and return it to the sifter.
  2. In a medium bowl, add the egg yolks, 1/4 c. sugar, and the vanilla. Beat on high speed until thick and pale yellow, 2-3 minutes.
  3. Scrape the yolk mixture into a large bowl. Sift the flower evenly over the top, but do not mix it in.
  4. In another large bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form. Increase speed to high, and gradually add the 1/3 c. sugar. Beat until the peaks are stiff, but not dry.
  5. Fold 1/3 of the egg whites mixture not quite thoroughly into the yolk mixture. Fold in the remaining whites in 2 additions.
  6. Scrape the batter into a large pastry bag fitted with a 5/8" plain tip.
  7. Pipe 4" fingers at least 1" apart on baking sheets lined with parchment paper.
  8. Sift powdered sugar lightly over the lady fingers.
  9. Bake in a 350 degree F preheated oven for 10-15 minutes.
  10. Slide the parchment onto a rack and cool completely.
