- **all ingredients should be at room temperature** shopping list
- 1 c. plus 2 tbsp. sifted cake flour shopping list
- 6 eggs, divided into yolks and whites shopping list
- 1/4 c. sugar and 1/3 c. sugar shopping list
- 1 tsp. vanilla shopping list
- 1/4 tsp. cream of tartar shopping list
- powdered sugar shopping list
How to make it
- Sift the cake flour twice and return it to the sifter.
- In a medium bowl, add the egg yolks, 1/4 c. sugar, and the vanilla. Beat on high speed until thick and pale yellow, 2-3 minutes.
- Scrape the yolk mixture into a large bowl. Sift the flower evenly over the top, but do not mix it in.
- In another large bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form. Increase speed to high, and gradually add the 1/3 c. sugar. Beat until the peaks are stiff, but not dry.
- Fold 1/3 of the egg whites mixture not quite thoroughly into the yolk mixture. Fold in the remaining whites in 2 additions.
- Scrape the batter into a large pastry bag fitted with a 5/8" plain tip.
- Pipe 4" fingers at least 1" apart on baking sheets lined with parchment paper.
- Sift powdered sugar lightly over the lady fingers.
- Bake in a 350 degree F preheated oven for 10-15 minutes.
- Slide the parchment onto a rack and cool completely.
