Elaines Mesquite Smoked Turkey

- 1 fair-sized turkey breast shopping list
- 4 turkey wings shopping list
- salt to taste, preferably coarse salt shopping list
- aluminum foil to make smoke pouch shopping list
- Mesquite wood chips shopping list
How to make it
- To make the smoke pouch:
- lay out one long piece of tinfoil
- to this, top with dry mesquite wood chips
- Add a little water to create steam and help it to smoke
- Cover this with another sheet of foil
- Fold up the foil on all four sides to create a pouch
- Puncture the pouch about 8 places on both sides

- oil the grill
- Salt the turkey pieces
- Light the grill as follows:
- Left burner, HIGH
- On this side, set the pouch
- Middle burner OFF
- Here, place the turkey pieces
- Right burner, HIGH for first 25 minutes, then turn to MEDIUM flame
- Close the lid, and let the smoke pouch permeate the meat
- Allow the turkey to rest, tented in foil, for at least 15 minutes before carving
- Served with cole slaw, steamed or grilled celery, carrot and asparagus, this makes a main you will want to make often!
