Lovely, lean turkey breast and wings, smoked to perfection in the BBQ... the Mesquite chips add a piquant flavor to the turkey.

Ingredients
  • 1 fair-sized turkey breast
  • 4 turkey wings
  • salt to taste, preferably coarse salt
  • aluminum foil to make smoke pouch
  • Mesquite wood chips

Directions
  1. To make the smoke pouch:
  2. lay out one long piece of tinfoil
  3. to this, top with dry mesquite wood chips
  4. Add a little water to create steam and help it to smoke
  5. Cover this with another sheet of foil
  6. Fold up the foil on all four sides to create a pouch
  7. Puncture the pouch about 8 places on both sides

  9. oil the grill
  10. Salt the turkey pieces
  11. Light the grill as follows:
  12. Left burner, HIGH
  13. On this side, set the pouch
  14. Middle burner OFF
  15. Here, place the turkey pieces
  16. Right burner, HIGH for first 25 minutes, then turn to MEDIUM flame
  17. Close the lid, and let the smoke pouch permeate the meat
  18. Allow the turkey to rest, tented in foil, for at least 15 minutes before carving
  19. Served with cole slaw, steamed or grilled celery, carrot and asparagus, this makes a main you will want to make often!
