Tortellini And Spinach With Vodka Sauce Recipe

Ingredients

1 pound frozen tortellini, meat or cheese

1 tablespoon olive oil

2 tablespoons minced garlic

10 ounces frozen chopped spinach, thawed and drained

24 ounce jar vodka sauce

2 cups mozzarella cheese, shredded

Directions

Preheat oven to 350 degrees F..

Cook tortellini according to package directions.

Heat olive oil in large skillet over medium high heat.

Saute garlic for 2 minutes.

Add sauce to garlic and simmer about 10 minutes.

Stir in spinach and 1 cup mozzarella cheese over low heat.

Drain tortellini and place in 8x8" baking dish.

Pour sauce over tortellini and mix thoroughly.

Top with remaining mozzarella cheese.

Bake for 15 minutes.
