Balsamic Chicken with Thyme

- 1/4 cup flour shopping list
- 3/4 teaspoon EACH salt and pepper shopping list
- 4 boneless, skinless chicken breast halves shopping list
- 2 tablespoons olive oil shopping list
- 1 large red onion, cut in half lengthwise, then thinly sliced - 2 cups shopping list
- 1 cup chicken broth shopping list
- 2 tablespoons balsamic vinegar shopping list
- 2 teaspoons fresh thyme leaves OR 1/2 teaspoon dried thyme shopping list
How to make it
- Mix flour and 1/2 teaspoon each salt and pepper on a plate.
- Add chicken and turn to coat with mixture.
- Shake off excess.
- Heat oil in a large cast iron or other heavy skillet over medium heat.
- Add chicken and cook, turning once after 10 minutes OR until browned and cooked through.
- Remove to plate and cover to keep warm.
- Add onion to skillet and saute 1 to 2 minutes until lightly browned.
- Add broth, vinegar, thyme and remaining salt and pepper.
- Bring to a boil and cook, stirring often for 7 minutes OR onions are soft and sauce syrupy.
- Spoon sauce over chicken.
