Gleaned from the pages of the March 6, 2007 issue of Woman's Day magazine, this balsamic delight sounds very good to me... I'm looking forward to trying it soon.

Ingredients
  • 1/4 cup flour
  • 3/4 teaspoon EACH salt and pepper
  • 4 boneless, skinless chicken breast halves
  • 2 tablespoons olive oil
  • 1 large red onion, cut in half lengthwise, then thinly sliced - 2 cups
  • 1 cup chicken broth
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons fresh thyme leaves OR 1/2 teaspoon dried thyme

Directions
  1. Mix flour and 1/2 teaspoon each salt and pepper on a plate.
  2. Add chicken and turn to coat with mixture.
  3. Shake off excess.
  4. Heat oil in a large cast iron or other heavy skillet over medium heat.
  5. Add chicken and cook, turning once after 10 minutes OR until browned and cooked through.
  6. Remove to plate and cover to keep warm.
  7. Add onion to skillet and saute 1 to 2 minutes until lightly browned.
  8. Add broth, vinegar, thyme and remaining salt and pepper.
  9. Bring to a boil and cook, stirring often for 7 minutes OR onions are soft and sauce syrupy.
  10. Spoon sauce over chicken.
