Ingredients

How to make it

  • Heat oil in medium saucepan to 350 degrees.
  • Sift flours, baking powder and salt into a small bowl.
  • Mix eggs and sugar in a large bowl until just combined.
  • Add ricotta, lemon zest and vanilla until well combined.
  • Add flour mixture.
  • Stir until smooth.
  • Carefully drop dough balls (tablespoon-size), a few at a time, into oil.
  • Cook, turning 2 or 3 times until golden on all sides.
  • Adjust heat as necessary to maintain oil temperature.
  • Drain fritters on paper towels.
  • Repeat until dough is gone.
  • Place on a brown grocery bag.
  • Dust with confectioners' sugar.
  • Put lemon curd in a bowl for dipping, if desired.
  • Serve.

    If you leave the lemon out of this, it is sometimes called a "St. Joseph Cake". Mounding them on a plate makes them a "cake", I suppose! My grandmother used to make these and I just couldn't get enough of them. We ate them as soon as they were cool enough to pick up without getting burned, julia. Enjoy, thanks ~ ~ ~
