How to make it

  • Preheat oven to 350F, grease a 9x13 pan.
  • Cream together sugar and margarine. Add lemon juice, zest, vanilla and lemon extracts and beat well.
  • Whis together dry ingredients in a medium bowl.
  • Mix the water and soy milk in a measuring cup or small dish.
  • Add dry ingredients alternately with the liquids, beating well after each addition.
  • Bake 35-40 minutes, or until cake tests done.
  • Cool completely in the pan before turning out.

    Just sold two of these at a bake sale...and didn't tell anyone they were vegan. I also made some as cupcakes, and one lady came back for seconds :) Hooray!

    What type of margarine are you using? Is it a vegan margarine or the basic stuff ?

    I've made it twice so far personally and it's great - you can't tell at all that there's soy milk in it either. I was surprised that not one person in my class of 32 guessed it was vegan either, they all loved it!

    Has anyone tried making this? Is it nice? I want to make this as my Birthday cake. I'm a vegetarian and I have a vegan coming to my Birthday party, but most of my friends eat meat, so I want it to be pleasing to everyone. I'm a little worried how my friends will react to the soy milk taste, is it very noticeable?
