Easy Strawberry Cake

Ingredients
- CAKE: shopping list
- 2 cups sliced fresh strawberries, shopping list
- 1 box white cake mix shopping list
- 1 small package strawberry Jell-O shopping list
- 3 whole eggs shopping list
- 1⁄3 cup oil shopping list
- 1 cup water shopping list
- ICING: shopping list
- 3 tablespoons butter shopping list
- 21⁄2 cups confectioners’ sugar shopping list
- strawberries and juice shopping list
How to make it
- Make cake:
- Heat oven to 350 degrees and lightly grease pan of choice. ( layer pans, cupcake tins, oblong pan etc )
- Set aside 1⁄3 cup of berries for the icing.
- Mix the remaining ingredients together using a hand
- mixer.
- Mix on medium for at least 2 minutes.
- This will mash the strawberries some what, which is fine.
- Bake according to instructions on box.
- The cake will likely need a little extra time because the berries give it more moisture.
- Make icing: Melt butter and add confectioners’ sugar
- and enough berries and juice to get the right consistency.
- It might need more confectioners’ sugar or a small amount of
- milk to make it right.
