Key Lime Mousse

- 1/2 tablespoon grated key lime zest shopping list
- 1/2 cup fresh key lime juice shopping list
- 1/2 cup granulated sugar shopping list
- pinch of salt shopping list
- 3 large eggs shopping list
- 3/4 stick butter, cut into bits shopping list
- 2/3 cups chilled heavy cream shopping list
How to make it
- Whisk together zest, juice, sugar, salt and eggs in small heavy saucepan.
- Add butter and cook over medium-low heat, whisking frequently, until it thickens (about 5 minutes).
- Force through fine-mesh sieve into a bowl, then quick chill in an ice bath.
- Stir occasionally for about 5 minutes.
- Beat cream until it holds stiff peaks, then fold into custard gently but thoroughly.
- Spoon into glasses and chill at least 2 hours.
