Good Earth & Country Cooking tells us that a quart of this relish makes a great gift. It keeps 3 to 4 weeks in the refrigerator in a covered container. Servings is a guess on my part!

Ingredients
  • 1 1/2 cups chopped red peppers
  • 1 1/2 cups chopped green peppers
  • 1 cup chopped onion
  • 2 teaspoons salt
  • 2 cups sugar
  • 1 cup cider vinegar
  • 2 tablespoons mustard seeds
  • 1 tablespoon celery seed

Directions
  1. Put peppers and onion in a pan with water to cover and 1 teaspoon salt.
  2. Cook until tender and drain well.
  3. Combine sugar, vinegar, mustard seed ans celery seed and remaining teaspoon salt in an enameled OR stainless steel saucepan.
  4. Bring to a boil stirring until sugar dissolves.
  5. Pour over the drained peppers.
  6. Return to the pan, bring to a boil and cook 2 minutes.
  7. Pour into hot sterilized jars and seal.
  8. Makes about 2 quarts.
