Ingredients
  • 4 bulbs of garlic
  • 1/4 c. of olive oil
  • 6 tbsp. of unsalted butter
  • 1/3 c. of dry sherry
  • 1 c. of heavy whipping cream
  • 1 tbsp. of lemon juice, or to taste
  • 4 chopped leeks
  • 1 chopped onion
  • 6 tbp. of all-purpose flour
  • 4 c. of chicken broth
  • salt to taste
  • 1/4 tdp. of freshly ground white pepper
  • 2 tbsp. of chopped fresh chives

Directions
  1. First by cuttin gof the tops of each garlic head.
  2. Now place the garlics into a baking dish.
  3. Sprinkle Olive oil over these and bake at 350 degrees around 60 min.
  4. Let this cool.
  5. Now take knife and press on garlic, and then mince.
  6. Add butter to heated pan and saute garlic, leeks and onions approx. 8 min.
  7. Now add flour and cook approx. 10 more min.(stir)
  8. Add hot broth and sherry to this letting simmer over medium flame.
  9. Let this cool and puree mixture in food processor.
  10. Pour back in hot pan and add slowly the cream.
  11. Let this thicken(approx. 10 min)
  12. Sti in lemon juice.
  13. Finally, season with the salt and pepper!
