How to make it

  • To prepare oven, baking pan:
  • Heat oven to 375 degrees. Lightly coat a 9x13 inch pan with cooking spray.
  • To make filling:
  • Arrange peaches in even layer in prepared baking pan. Set aside. In a large
  • bowl, whisk together granulated sugar, brown sugar, flour, cinnamon, and nutmeg.
  • Whisk in peach juice until smooth. Pour over peaches. Sprinkle butter over top. Set aside.
  • To make crust:
  • In a medium bowl,whisk together flour and salt. Add shortening and butter. Using a pastry
  • blender or gloved hands, {Fur lined mitts will not work for this}work butter and shortening into
  • dry ingredients until mixture forms pea sized lumps. Slowly add water, adding only enough to hold the dough together.
  • (Do not over mix). Place dough between two sheets of parchment paper. Roll dough into a rectangle slightly larger than baking pan,
  • and about 1/4 inch thick. Remove top sheet of parchment paper. Cut dough into strips and weave into crust over cobbler.
  • Trim crust to fit inside pan.
  • To bake: Bake for 50 minutes to 1 hour or until crust is golden brown. Let stand 10 minutes before serving.
