GREAT recipe ... creamy, rich, & easy enough for my 4-year old to prepare practically all by herself! The lemon juice really brightens / freshens it up so if possible - don't leave it out! In fact, I consider this ingredient as vital to the recipe as the cream cheese itself! But if you really like the underlying flavor of lemon (as we do), I suggest zesting some of the rind to add to the mixture when creaming it together (I usually add about a Tablespoon, but its really up to your own personal taste for it). The essential lemon oils give it a sweet, citrus-y taste --without being actually tart or too pungent -- and we just love it!
