From our Chef of the Day 6, ingredients. This turned out so pretty served in a wide mouth glass or goblet. This is also great for a luncheon, as it can be eaten at room temperature.

Ingredients
  • 2 cups cooked brown rice
  • 1 can black beans, drained
  • 1/2 red onion, diced
  • 2 red peppers, diced
  • 1 mango, diced
  • about 24 small/medium sized shrimp(cooked and thawed or, if you use fresh, just boil as you would for shrimp cocktail:)
  • 1 cup sour cream(light is okay)
  • 6-8 large jalapeno stuffed green olives, finely chopped
  • 2 large flour tortillas, cut into strips
  • about 3/4 cup cojita(or similar) cheese, freshly grated
  • oliveoil

Directions
  1. Combine cooked rice and rinsed black beans. Add salt and pepper to taste.
  2. In small bowl, combine sour cream and chopped olives. Refrigerate while finishing prep.
  3. In small skillet, saute onions briefly in olive oil, set aside to cool but don't discard oil.
  4. Heat oil to medium high heat and add tortilla strips to quickly fry them until just crispy. Drain.
  5. In small bowl, combine mango, red pepper and onion.
  6. For serving, layer in goblet or similar glassware as follows:
  7. About 3/4 cup of the rice mixture.
  8. Sprinkle with about 1T cheese.
  9. Add vegetable relish, then arrange about 6 shrimp over relish.
  10. Top with a dollop of the dressing and about another T or so of cheese.
  11. Serve with the tortilla strips.
