Pie Tin Cookie For One Recipe
Sometimes I just want one cookie and don't feel like making 5 dozen. This makes a large cookie about 6 inches in diameter and 3/4 inches thick. It is very good with the center still a little soft.

Ingredients
  • 1/2 cup unbleached flour
  • 1/4 cup Old-fashioned oatmeal
  • 1/4 tsp salt
  • 3/8 cup brown sugar
  • 1/2 tsp vanilla
  • 5 one second sprays of Pam
  • 1/4 cup chocolate chips
  • 2 Tablespoons Peanut Butter
  • 2 Tablespoons water

Directions
  1. Mix all the dry ingredients in a bowl large enough to get your hand in to mix.
  2. Add the peanut butter, Pam and Vanilla and mix together well with your hand or wooden spoon.
  3. Add the water; mix well again.
  4. Stir in the Chocolate chips.
  5. Place in a ungreased metal pie tin and form a flat cookie about 6 to 7 inches across by 3/4 inch.
  6. Bake in a preheated oven at 350 for about 20 to 25 minutes depending on how done you like your cookies.
  7. Cool and enjoy with a big glass of ice cold milk.
