Curried Chicken Salad With Fruit Recipe
This salad can be served as a main dish or as a sandwich filling. I have also served it as an appetizer on mini croissants. If you like curry, try it - I'm sure you will like it!

Ingredients
  • 2 boneless, skinless chicken breasts, diced in 1/2" pieces
  • 2 stalk celery, diced in 1/2" pieces
  • 1 green onion, thinly sliced
  • 1/4 lb seedless grapes (red or green) cut each grape in quarters
  • 1/2 cup chopped pistachios (or substitute pecans)
  • 1/4 cup mango chutney
  • 1 teas. curry powder
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 Tbsp. honey
  • Salt & Pepper to taste

Directions
  1. Poach diced chicken in enough water to cover (add a splash of white wine if you like!) and cook for 10 minutes over medium until done. Drain and cool.
  2. In a large salad bowl, combine mayonnaise, sour cream, curry powder, honey, salt and pepper.
  3. Add chicken. celery, green onion, grapes, nuts and chutney. Mix together and make sure all ingredients are coated. Chill for at least 1 hour so flavors can blend.
  4. Excellent served in butter lettuce leaves as a main dish or on a nice, hearty wheat bread as a chicken salad sandwich!

My mom made something similar but used pineapple, banana and cashews. The dressing is just like hers. It is so good.


I didn't know there were several curried chicken salad recipes on Group Recipes which had fruit & nuts. From now on I'll have to search for similar recipes before submitting! I think I'd love this because it is so similar to my "Chutneyed Chicken Salad" here at Group Recipes (except my dressing is lower in fat). What inspired you to create this recipe?
