Smoked Sausage soup

- 1/2 lb of Hilshire Farm smoked sausage cut in 1/4" rounds shopping list
- 1/2 lb of cooked chicken meat in 1/2"l cubes shopping list
- 1 onion in quarter inch dice shopping list
- 2 stalks celery in quarter inch dice shopping list
- 4 to 5 canned whole tomatoes cut up and a little of their juice shopping list
- 6 medium size mushrooms cut in quarters or smaller shopping list
- 1/3 C of uncooked white rice shopping list
- 1 jalapeno chopped fine shopping list
- 2 cloves of garlic chopped fine shopping list
- 1 quart of chicken stock - the richer the better shopping list
- 1 t tyme shopping list
- 1 t oregano shopping list
- 1/8 t of red pepper flakes shopping list
- salt to taste - as you go shopping list
- pepper to taste - as you go shopping list
- 1 t apple cidar vinegar shopping list
- 1 t soy sauce shopping list
How to make it
- Oil a big sauce pan (2 T of canola will work)
- Add onion, celery, jalapeno, garlic, tyme, oregano, pepper flakes and cook until onions are turning translucent
- Add the chicken stock and bring to an easy boil
- Oil another sauce pan and brown the chicken and sausage a little
- Add the chicken, sausage and tomatoes to the stock and veggies
- Add the vinegar and soy sauce
- You should be adding salt and pepper throughout
- Watch the salt, the sausage is a little salty and that will release
- Bring to a boil and then simmer for 30 minutes - covered and not
- Add rice and mushrooms, stir and cover -simmer for 20 minutes
- Add chopped Italian parley for garnish and tear in
