Tamale Chicken Casserole Recipe
In our house the 70's was the era of the casserole. This is NOT a hot spicy dish, yet very flavorful and youngsters seem to like it.

Ingredients
  • 2-3 CHICKEN BREASTS (boneless, skinless)
  • 2-3 CHICKEN THIGHS (boneless, skinless)
  • 1 1 ½ lb. Can Gebharts or Hormel Beef Tamales
  • 1 can Whole Kernel Corn (drained)
  • 1 can Cream of Chicken Soup
  • 1 cup Shredded Jack Cheese
  • 1 cup Shredded Cheddar Cheese
  • Ripe Black Olives (optional)

Directions
  1. Preheat oven to 325
  2. Cook chicken til done, let cool, cut into bite size pieces (saute or bake or use a market pre-cooked rotisserie chicken)
  3. Remove husks from tamales and discard, cut tamales into bite size pieces
  4. Layer bite size pieces of tamales over bottom of 9x13 oblong casserole pan.
  5. Cover Tamales with corn
  6. Add Jack Cheese.
  7. Place chicken atop cheese
  8. Spread chicken soup over all.
  9. Finish with Cheddar Cheese and dot olives on top.
  10. Cover with foil and bake at 325 for 1 ½ hours.
