Sweet And Smoky Chicken And Salad

- 1 pkg chicken tenderloins (about a pound) shopping list
- 1/4 cup McCormick's Sweet and Smokey Rub shopping list
- 4 Tb olive oil, divided shopping list
- 2 tsp white balsamic vinegar shopping list
- 1 tsp course black pepper shopping list
- 1 tsp dried oregano shopping list
- 1 pkg prepared salad, Spring Mix (romaine, tango, radiacchio lettuces, spinach, whatever) shopping list
How to make it
- Start the grill.
- Sprinkle the McCormicks Sweet and Smokey rub in a paper plate. In another paper plate, place the chicken tenderloins and 2 Tb olive oil. Stir the oil and the tenderloins until well covered. Transfer each tenderloin to the rub containing plate and swirl until completely covered. Set aside on a third paper plate. Continue until all tenderloins are covered with rub. Allow to sit for 10-15 minutes until the tenderloins appear moist.
- Transfer the tenderloins to the grill.
- While the chicken is grilling, combine the remaining two tablespoons of oil and the balsamic vinegar in a small finger bowl. Blend in the black pepper and oregano. Allow to sit.
- Divide the salad mix into two bowls.
- When the ends of the tenderloins turn white and done, remove from grill (10 min). Place on cutting board and chop into 1/2 - 3/4 " lengths. Divide evenly between the two salad bowls.
- Sprinkle the oil and vinegar mix over the salads.
- Enjoy.
