My Kids Favorite Pancakes

- 1 cup whole wheat flour shopping list
- 1 cup all purpose flour shopping list
- 2 tbsp. sugar shopping list
- ½ heaping tsp. baking powder shopping list
- ½ heaping tsp. baking soda shopping list
- ½ heaping tsp. salt shopping list
- 1-3/4 cups buttermilk shopping list
- 3 large organic eggs shopping list
- 3 tbsp. unsalted, butter, melted, cooled shopping list
- 1 tbsp. butter for the griddle shopping list
How to make it
- Sift first 6 ingredients into a large bowl. Whisk buttermilk, eggs and melted butter in medium bowl to blend. Add buttermilk mixture to dry ingredients and whisk until blended and smooth.
- Preheat oven to 300 degrees F (optional). Lightly coat the bottom of a large heavy skillet or griddle pan with 1 tbsp. butter. Heat over medium heat.
- Working in batches, pour ¼ cup of batter into skillet for each pancake. Cook until the bottoms are golden, about 1-1/2 minutes. Turn pancakes and cook until second sides are golden, about 1 minute.
- Transfer to baking sheet; place in oven to keep warm if desired. Repeat with remaining batter, adding more butter to skillet as necessary.
- Serve with a smear of butter over the top of each one and the syrup of your choice.
- Makes approximately 12 pancakes
