My Kids Favorite Pancakes Recipe

After trying zillions of different "best" pancake recipes, this is the one that my kids overwhelmingly loved the most. It's official now!

Ingredients
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 2 tbsp. sugar
  • ½ heaping tsp. baking powder
  • ½ heaping tsp. baking soda
  • ½ heaping tsp. salt
  • 1-3/4 cups buttermilk
  • 3 large organic eggs
  • 3 tbsp. unsalted, butter, melted, cooled
  • 1 tbsp. butter for the griddle

Directions
  1. Sift first 6 ingredients into a large bowl. Whisk buttermilk, eggs and melted butter in medium bowl to blend. Add buttermilk mixture to dry ingredients and whisk until blended and smooth.
  2. Preheat oven to 300 degrees F (optional). Lightly coat the bottom of a large heavy skillet or griddle pan with 1 tbsp. butter. Heat over medium heat.
  3. Working in batches, pour ¼ cup of batter into skillet for each pancake. Cook until the bottoms are golden, about 1-1/2 minutes. Turn pancakes and cook until second sides are golden, about 1 minute.
  4. Transfer to baking sheet; place in oven to keep warm if desired. Repeat with remaining batter, adding more butter to skillet as necessary.
  5. Serve with a smear of butter over the top of each one and the syrup of your choice.
  6. Makes approximately 12 pancakes
