GREEN CURRY PORK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marlin Estate in Heath, Texas in 1998.

Ingredients
  • 2 tablespoons vegetable oil
  • 2 tablespoons green curry paste
  • 1 pound pork tenderloin trimmed of excess fat and sliced thin
  • 1- 1/2 cups coconut milk
  • 1-1/2 cups vegetable stock
  • 3 tablespoons lime juice
  • 3 tablespoons fish sauce
  • 1 tablespoon granulated sugar
  • 20 pearl onions peeled
  • 1/2 pound new potatoes halved
  • 1 cup unsalted roasted peanuts chopped plus additional for garnish
  • 1/2 pound haricot beans cut into 2” pieces
  • 1 green bell pepper cored seeded and thinly sliced

Directions
  1. Heat oil in large pot over moderate heat and saute curry paste stirring constantly 30 seconds.
  2. Add pork stirring to coat with curry paste until lightly browned about 2 minutes.
  3. Add remaining ingredients except peanuts, beans and bell peppers then bring to a boil.
  4. Reduce heat and simmer uncovered for 5 minutes.
  5. Add remaining ingredients and simmer until potatoes are tender about 15 minutes.
  6. Garnish with chopped peanuts and serve immediately.

Never heard of haricot beans, where would you find those? Sounds like a great combination!

I love curry! Can't wait to give this a try, it does sound wonderful. I too was wondering about the haircot beans. I've never heard of them. Is it a type of snap bean?
