How to make it

  • Heat oil in large pot over moderate heat and saute curry paste stirring constantly 30 seconds.
  • Add pork stirring to coat with curry paste until lightly browned about 2 minutes.
  • Add remaining ingredients except peanuts, beans and bell peppers then bring to a boil.
  • Reduce heat and simmer uncovered for 5 minutes.
  • Add remaining ingredients and simmer until potatoes are tender about 15 minutes.
  • Garnish with chopped peanuts and serve immediately.

    I love curry! Can't wait to give this a try, it does sound wonderful. I too was wondering about the haircot beans. I've never heard of them. Is it a type of snap bean?
