Sour Cream Pumpkin Coffeecake

- 1/2 cup butter shopping list
- 3/4 cup sugar shopping list
- 1 teaspoon vanilla shopping list
- 3 eggs shopping list
- 2 cup flour shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 cup sour cream shopping list
- 16 ounce can pumpkin shopping list
- 1 slightly beaten egg shopping list
- 1/3 cup sugar shopping list
- 1 teaspoon pumpkin pie spice shopping list
- Streusel: shopping list
- 1 cup packed brown sugar shopping list
- 1/3 cup butter shopping list
- 2 teaspoons cinnamon shopping list
- 1 cup chopped pecans shopping list
How to make it
- Cream together butter, sugar and vanilla then add 3 eggs beating well.
- Combine flour, baking powder and soda then add to butter mixture alternately with sour cream.
- Combine pumpkin, slightly beaten egg, sugar and pumpkin pie spice.
- Spoon half of batter into rectangular baking dish and spread to corners.
- For streusel combine brown sugar, butter and cinnamon together and mix well then stir in nuts.
- Sprinkle half of streusel over batter then spread pumpkin mixture over streusel.
- Carefully spread remaining batter over pumpkin mixture then sprinkle with remaining streusel.
- Bake at 325 for 35 minutes.
