Banana Cake Recipe

Ingredients

1/2 pound sweet butter (2 sticks) softened

1 cup granulated sugar

2 eggs

3-4 ripes bananas mashed

2 cups flour

1/2 tsp salt

1 tsp baking soda

2 tsp baking powder

1/2 cup buttermilk (tbsp buttermilk and balance to 1/2 cup mix Southern Comfort or bourban)

1-1/2 tsp vanilla

1 tsp cinnamon

1tsp allspice

1/2 tsp giner

1 cup chopped nuts (I used walnuts)

1-1/2 cup raisins

Directions

Preheat oven to 350

Grease & flour 2 9" layer pans (I also lined bottom with parchment paper)

Cream butter and sugar together till fluffy

Add eggs one at a time, beating well after each addition

Add mashed bananas, mixing thoroughly

Sift dry ingredients together and then stir into butter/egg mixture alternating with milk mixture

Add vanilla and mix for 1 minute

Add nuts and raisins to incorporate

Pour into prepared pan and bake at 350 for 20-30 minutes or until cake tester comes out clean from center of pans

Cool in pans on rack for 10 minutes

Unmold and cool for 2 hours

Frost cake with your favorite white frosting,
