I found this lucious pie on line at Diana's Desserts. The description reads that it has a crunchy macaroon-crunchy flavor. I can't wait to try it and hope you feel the same!

Ingredients
  • 9" pie shell, unbaked
  • 1/4 cup finely chopped nuts (slivered almonds are best)
  • 3 large eggs
  • 1/2 cup water, milk or coconut milk
  • 1 1/2 cups sugar
  • 1/4 cup flour
  • 1 1/3 cups flaked coconut
  • 1/2 cup melted butter
  • 1/2 teaspoon vanilla extract
  • Whipped Cream for garnish

Directions
  1. Sprinkle nuts over bottom of unbaked pie shell. Combine eggs, liquid used, sugar and flour. Beat until smooth. Stir in the remaining ingredients and pour into the pie shell. Bake in a 450 degree F oven for 10 minutes. Reduce heat to 350 degrees F,
  2. and bake for another 25-35 minutes, or until pie is almost set. Cool on rack.
  3. Garnish with a dollop of whipped cream!
