How to make it

  • Slice leeks in half lengthwise and clean well under cold running water. Cut leek halves into 1 1/2" pices. Heat olive oil in large wide skillet over med. heat. Place leeks, cut side up, in skillet and fry for 1 to 2 min. or until just tinged with gold. Flip leeks over and contine to fry an additional minute.
  • Add wine, lemon juice and stock and bring to boil. Reduce heat and simmer, covered for 15 min or until leeks are tender when pierced. Remove lid, increase heat and boil until remaining liquid has thickened slightly, about 2 min. Seson with s&p. Serve leeks in their own "gravy" and garnish with chopped parsley.

    Leeks are just coming into season here in the North and I think this will be one of the first ways I have them this year!
