Ingredients
  • MARINADE
  • 1/4 c EVOO
  • 1/4 c dry gin or vodka
  • 1/4 c dry white vermouth
  • 3 T chopped pimento stuffed olives
  • 6 cloves garlic, minced
  • 3 T olive brine (from jar of olives)
  • 2 T fresh lemon juice
  • 1/2 t kosher salt
  • SKEWERS
  • 1 lb boneless beef top sirloin stek, trimmed
  • 12 blue cheese stuffed olives
  • 12 pickled pearl onions

Directions
  1. MARINADE
  2. Whisk together marinade ingredients in a large bowl and set aside
  3. Slice steak against thhe grain into 1/4 inch strips
  4. Place meat in large ziploc baggie and pour marinade over (resrve 1/4 c marindae for basting)
  5. Work bag with hands to coat meat with marinade.
  6. Place in fridge for an hour
  7. SKEWERS
  8. Preheat grill to medium high heat
  9. Divide marinated steak strips evenly amoung four metal skewers, folding each strip accordian style, then spearing strips through their centers
  10. Alternate stek strips with blue cheese stuffed olives and pickled onions, and spread strips out along length of each skewer
  11. Grill covered, over direct heat, for 2 minutes
  12. Turn, baste with remaining marinade and grill 2 minutes more
