Swampland Greek Style Shrimp Dinner

- nonstick cooking spray shopping list
- 2 pounds large shrimp, peeled and deveined. shopping list
- 3 cloves of garlic, minced. shopping list
- 3 tablespoons lemon juice. shopping list
- 2 teaspoons dried rosemary, chopped fine. shopping list
- 2 teaspoons Cavender's Greek seasoning. shopping list
- 1 teaspoon Old Bay Seasoning. shopping list
- 1 teaspoon iodized sea salt, or kosher salt shopping list
- 1 teaspoon coarse ground black pepper. shopping list
- 8 red potatoes, quartered and cut into 1/4 inch thick slices. shopping list
- 3 teaspoons extra virgin olive oil. shopping list
- 1 (20 oz.) package of fresh spinach, trimmed and rinsed well, shopping list
- 3/4 cup crumbled feta cheese. shopping list
- 1 large vegetable or meat oven cooking bag. shopping list
- 1 package (6) of Pita, flat, or naan bread, browned in non-stick skillet. shopping list
- Soft butter for bread shopping list
How to make it
- Preheat oven to 400 degrees.
- Coat large oven bag with nonstick cooking spray and set aside.
- In a large bowl, combine shrimp, garlic, lemon juice, rosemary, salt, pepper, Greek seasoning, Old Bay seasoning, and stir to make sure everything is coated.
- Put potato slices inside of cooking bag, add rosemary and olive oil and twist top of bag and toss around to make sure potatoes are coated well.
- Then arrange potatoes on bottom of bag, with bag sideways and opening on one end (to give you more room), top potatoes with spinach and then top spinach with shrimp mixture, seal bag good.
- With bag on a baking sheet, place in oven and bake for 40 minutes, or until potatoes are tender.
- Remove baking sheet with the oven bag on it. Cut open bag with sharp knife or scissors, carefully folding back to allow steam to escape. (steam will burn you, so please be careful)
- Place bread on a plate, spread with butter and spoon potatoes & shrimp onto bread, then top with crumbled feta cheese .
- This is a complete meal, and one that is pretty good!
