  • *** Spice rub***
  • 1 Tbsp black pepper
  • 1 tsp cayenne pepper
  • 2 Tbsp chili powder
  • 2 Tbsp cumin
  • 2 Tbsp brown sugar
  • 1 Tbsp oregano
  • 4 Tbsp paprika
  • 2 Tbsp salt
  • 1 Tbsp granulated sugar
  • 1 Tbsp white pepper
  • ****************
  • 2-2.5 kg Pork shoulder, Fat off. Mine didnt have a bone, but whatever.
  • 1 onion, sliced
  • 1 tsp liquid smoke, optional (if you can find it)
  • BBQ sauce - your favourite, or see my recipe. But DONT use those dark-coloured "masterfoods" or "fountain" type ones we get here in Australia. They taste nothing like the REAL bbq sauce.

Directions
  1. Combine all the spice rub ingredients in a bowl.
  2. Passage well into the pork shoulder, Really get it in there.
  3. Cover with plastic (or place in a big zip lock bag) and leave overnight, or up to 3 days.
  4. Place sliced onions in the bottom of your crock pot/slow cooker. Place pork on onions and add 1/4 cup of water and the liquid smoke if you're using it.
  5. Cover and cook on HIGH for one hour, then switch to LOW for like 8 hours.
  6. While its cooking DO NOT open the lid. You do NOT need to turn it or add more water or poke it or anything. It'll be fine ok? Trust me.
  7. Ok so while its doing its thing in there, you could make the BBQ sauce, go find my recipe, its good ok.
  8. After about 9 hours of cooking, remove the pork from the pot, this might be tricky because its to tender and juicy and falling-apart (i was amazed and how easy my fork went into it)... but yeah, take it out and PULL it apart. (this is where it gets its name, see?) i used some tongs and a big fork, but you can use your hands if its not too hot.
  9. Discard the juice and onions in the pot (seems like such a waste, i know.... maybe you could make a gravy out of it later...lemme know any good ideas).
  10. Return the now PULLED pork to the pot and add however much bbq sauce as you like. I didnt use much cause i have extra sauce on the pork when i make it into a sammich anyway. Cook for another hour or so.
  11. aaannnd...ITS DONE. finally. yess!
  12. Serve on soft white rolls/buns with sliced onion, pickles and extra bbq sauce.
  13. OM NOM NOM NOM.... the best. seriously. Do it.
