Pink Princess Rhubarb Bars

- 2 1/2 cups diced rhubarb shopping list
- 1/4 cup sugar shopping list
- 1 cup brown sugar shopping list
- 2 tbsp shortening shopping list
- 1/3 cup low fat cream cheese, softened shopping list
- 1 egg shopping list
- 1 cup frozen mixed berries, thawed and pureed shopping list
- 1/2 tbsp vanilla shopping list
- 1/2 tbsp grated fresh ginger shopping list
- 1 1/3 cups flour shopping list
- 1 cup whole wheat flour shopping list
- 1 tsp baking soda shopping list
- 1/2 cup almonds, toasted and chopped shopping list
- 1/3 cup white chocolate chips shopping list
How to make it
- Preheat oven to 350 degrees, line a 9 x 13" pan with parchment paper.
- Toss rhubarb and white sugar, set aside.
- Cream brown sugar, shortening and cream cheese.
- Add egg, berry puree, vanilla and ginger, beating well.
- In another bowl, whisk together flours and baking soda.
- Stir into creamed mixture until moistened, then fold in rhubarb, almonds and white chocolate chips.
- Bake for 50 minutes.
- Cool completely (ideally, chill) before cutting and serving.
