Steakhouse Style Creamed Spinach Recipe
From Bob Blumer comes this very easy but delcious spin on restaurant style creamed spinach, No roux here, dish is thicked with the Boursin cheese

Ingredients
  • 2 tbs olive oil
  • 1 shallot minced
  • 1 Lb. frozen spinach thawed
  • 1/4 cup half and half or cream
  • 2 1/2 oz Boursin cheese at room temp
  • salt, pepper, nutmeg to taste

Directions
  1. Squeeze out excess liquid from thawed spinach
  2. Saute the shallot in olive oil a minute or two over med-high heat
  3. Add spinach and stir to heat
  4. Add cream and Boursin.
  5. cook and stir about 3 minutes or until cheese is reduced and mixture is thick
  6. season to taste
