How to make it

  • Squeeze out excess liquid from thawed spinach
  • Saute the shallot in olive oil a minute or two over med-high heat
  • Add spinach and stir to heat
  • Add cream and Boursin.
  • cook and stir about 3 minutes or until cheese is reduced and mixture is thick
  • season to taste
