How to make it

  • Preheat oven to 425 degrees.
  • Crush potoato chips.
  • Coat a shallow baking pan with non-stick cooking spray.
  • Combine crushed potato chips, parsley and pepper. (A bit of cayenne can be added as well.)
  • Brush fish filets with butter.
  • Dredge in chips.
  • Bake 15 to 20 minutes.
