Absoloutly Scrumptious Roasted Garlic Cups Recipe
These fun appetizers (created by my mother!) have a crispy, toasted bread crust and a rich, roasted garlic and cream cheese filling.

Ingredients
  • 6 slices potato bread
  • softened butter
  • 4 large garlic cloves, unpeeled
  • 1 T. olive oil
  • 4 oz. cream cheese, softened
  • 1 T. butter, softened
  • 1 t. minced chives
  • 1/8 t. salt
  • additional chives or parsley sprigs for garnish

Directions
  1. Cut each bread slice with 2 inch biscuit cutter. Each slice should make 2 rounds.
  2. Spray 12 mini muffin cups with cooking spray.
  3. Spread butter on bread rounds.
  4. Press into muffin cups.
  5. Bake at 350 degrees for 10-15 min. until toasted.
  6. Place garlic in foil.
  7. Pour oil over garlic.
  8. Wrap in foil and bake 25 min. at 350 degrees.
  9. Cool garlic and mash in small bowl.
  10. In mixing bowl, beat cream cheese, butter, chives, salt, and garlic. Spoon into toast cups.
  11. Garnish with additional chives or parsley sprigs.
