So very good and good for you. Mom used to serve asparagus with butter and cheese baked in the oven. So I give her credit for the basic recipe. She loves this too.

  • Ingredients:
  • Butter, for greasing
  • 2 and 1/4 lb asparagus, spears trimmed
  • 2 cooked ham slices, cut into strips
  • 4 oz Fontina cheese, sliced
  • 2 eggs
  • 2 tablespoons Parmesan cheese, freshly grated
  • Salt and pepper
  • Squares of toasted Italian bread - season with Italian herbs

Directions
  1. Directions:
  2. Preheat the oven to 350deg F
  3. Grease an ovenproof dish with butter. Line the sides with the flavored toasted bread squares.
  4. Cook the asparagus in salted, boiling water for 10 minutes.
  5. Drain and place in the prepared dish and top with the ham and fontina.
  6. Beat the eggs with the Parmesan cheese, season with salt and pepper and pour over the asparagus.
  7. Bake for 15-20 minutes until the Parmesan has melted and the eggs have set.
  8. Let's Eat!

What a great idea! my family always served asparagus w/ hollandaise, which I don't care for much, so I usually just eat mine w/ salt & butter. This sounds quite worth a bit of extra effort.
