Zucchini Side Recipe

Ingredients

1 red onion, chopped

2 zucchini, sliced

1 440g tin diced tomato

3 cloves fresh garlic

1 red chilli, seeded and chopped (optional)

1 glass marsala wine (or any good sweet wine, sherry included)

6-10 basil leaves, chopped

Olive oil (EVOO)

salt and pepper

Directions

Add dash olive oil to a medium saucepan over medium heat on stove

Add red onion and sautee till softening

Add garlic, crank up the heat, stirring for a minute or so

Add wine, and then tinned tomato after wine comes to boil, turn down heat to simmer

Add zucchini and chopped basil, cover and simmer for a couple of minutes*

Remove lid and reduce liquid over high heat for a few minutes

Add seasoning to taste

Serve with whatever you like. It works well with sauteed lamb fillet (slice and fry in a little olive oil with garlic, sage and oregano)

* - ignore the simmer in this step if you like firmer veggies!

I love zuchinni and make what I call Stewed Zuchinni but it doesn't have the sweet wine. I'll be trying your recipe! Sounds wonderful!
