Zucchini Side

- 1 red onion, chopped shopping list
- 2 zucchini, sliced shopping list
- 1 440g tin diced tomato shopping list
- 3 cloves fresh garlic shopping list
- 1 red chilli, seeded and chopped (optional) shopping list
- 1 glass marsala wine (or any good sweet wine, sherry included) shopping list
- 6-10 basil leaves, chopped shopping list
- olive oil (EVOO) shopping list
- salt and pepper shopping list
How to make it
- Add dash olive oil to a medium saucepan over medium heat on stove
- Add red onion and sautee till softening
- Add garlic, crank up the heat, stirring for a minute or so
- Add wine, and then tinned tomato after wine comes to boil, turn down heat to simmer
- Add zucchini and chopped basil, cover and simmer for a couple of minutes*
- Remove lid and reduce liquid over high heat for a few minutes
- Add seasoning to taste
- Serve with whatever you like. It works well with sauteed lamb fillet (slice and fry in a little olive oil with garlic, sage and oregano)
- * - ignore the simmer in this step if you like firmer veggies!

I love zuchinni and make what I call Stewed Zuchinni but it doesn't have the sweet wine. I'll be trying your recipe! Sounds wonderful!
