How to make it

  • Add dash olive oil to a medium saucepan over medium heat on stove
  • Add red onion and sautee till softening
  • Add garlic, crank up the heat, stirring for a minute or so
  • Add wine, and then tinned tomato after wine comes to boil, turn down heat to simmer
  • Add zucchini and chopped basil, cover and simmer for a couple of minutes*
  • Remove lid and reduce liquid over high heat for a few minutes
  • Add seasoning to taste
  • Serve with whatever you like. It works well with sauteed lamb fillet (slice and fry in a little olive oil with garlic, sage and oregano)
  • * - ignore the simmer in this step if you like firmer veggies!

    I love zuchinni and make what I call Stewed Zuchinni but it doesn't have the sweet wine. I'll be trying your recipe! Sounds wonderful!
