Asian Grilled Eggplant

- 2 medium eggplants shopping list
- kosher salt shopping list
- Marinade: shopping list
- 1/4 cup soy sauce shopping list
- 3 tablespoons brown sugar shopping list
- 2 tablespoons olive oil shopping list
- 2 tablespoons rice vinegar shopping list
- 1 teaspoon sesame oil shopping list
- 1 teaspoon fresh ginger shopping list
- 3 cloves minced garlic shopping list
- Whisk together all ingredients in a small bowl. shopping list
How to make it
- Preheat an outdoor grill to medium heat.
- Slice eggplant into 1/2-inch-thick slices.
- Sprinkle with salt and let stand for 20 minutes.
- Rinse and pat dry.
- Pour marinade over eggplant and let stand for at least 10 minutes in the refrigerator.
- Remove from marinade, reserving leftover marinade.
- Place eggplant on grill, cook until eggplant is cooked through and lightly browned on all sides, about 10 minutes.
- Remove from grill.
- Serve with reserved marinade.
