How to make it

  • In a large bowl, mix all ingreds. but cheese.
  • On waxed paper, shape meat into an 8x? rectangle
  • Top with Velveeta, leaving room at the edges
  • Roll up from short side and place seam-side down in an 8 inch loaf pan whose bottom has been lined with 2-3 slices of stale bread.
  • Bake at 350 F for 1 hour.
  • Drain fat if any .
  • slice into 6 and serve topped with ketchup if desired
  • discard bread from bottom of pan.

    This is definitely a keeper. Made it last year and everyone loved it, so I'm added it to the list again and having it this week!!
    I will say, though- I don't know why you said to discard the bread from the bottom. Mine wasn't sloppy or anything. It seemed like a waste, so instead, we served the slices of the meatloaf ON the bread. It was like an open-faced cheeseburger! Delicious.

    Pooch can have the bread from the bottom -- maybe not all at once though.
    Similar to one I make but never thought about rolling it up -- nice.
