Ingredients
  • 1 pound beef, sliced very thin
  • 12 cups bread crumbs
  • 1/4 pound Parmesan cheese, grated
  • 1/4 cup fresh basil (or to taste)
  • 1 1/2 cup canned tomatoes (or use fresh)
  • 3/4 cup tomato paste

Directions
  1. Cut the beef into very thin slices, place between 2 pieces of waxed paper and pound thin.
  2. Sprinkle with bread crumbs, grated cheese, basil, rolled and secured with toothpicks.
  3. Brown the braciole. It is then put in a pot with canned tomatoes and tomato paste.
  4. Season to taste with salt and pepper.
  5. Reduce the heat to low, cover and simmer, turning the rolls occasionally, until the beef is tender when pierced with a knife, about 2 hours.
  6. Check from time to time to see if the sauce is becoming too dry; add a little water if needed.
  7. Remember anything using tomatoes is always better the second day.
